The Truth About Instant Coffee
Instant coffee is often a concern because it contains acrylamide, a compound that forms naturally when roasted at high temperatures. Although the content can be twice as high as roasted coffee, the actual amount is only about 0.5–1 microgram/cup, which is still within the safe limit according to WHO. To reach the harmful levels shown in animal experiments, humans would have to consume hundreds of thousands of times the amount of acrylamide in their normal diet. Many large studies have also found no clear link between coffee (including instant) and cancer risk.
Nutritionally, instant coffee still provides antioxidants such as chlorogenic acid and polyphenols, which help protect cells, support metabolism, the liver, control weight and reduce the risk of type 2 diabetes.
A study of 400,000 people (European Journal of Preventive Cardiology, 2022) showed that drinking 2–3 cups of coffee a day, whether instant or roasted, reduces the risk of death by 27% compared to people who do not drink coffee.
How to choose and use instant coffee effectively
