As time becomes more and more precious, instant coffee has become an indispensable companion of millions of people around the world. What is instant coffee?

Comparing instant coffee with traditional coffee 

In terms of caffeine content, instant coffee contains 30 to 90mg per cup, about 30-50% less than traditional coffee which contains 70 to 140mg. This difference can be an advantage for those who want to reduce their daily caffeine intake, worry about the impact on sleep, or want to drink coffee in the afternoon without fear of insomnia. 

In terms of flavor, traditional coffee brewed from freshly roasted beans often has a complex, multi-layered aroma with many different notes that are highly appreciated by coffee connoisseurs. However, high-end instant coffee products using modern freeze-drying technology have significantly narrowed the gap in flavor quality compared to fresh coffee. 

In terms of cost and time, instant coffee has a clear advantage with a price 5 to 10 times cheaper and a preparation time of only about one-tenth that of traditional coffee brewing methods.

The Truth About Instant Coffee 

Instant coffee is often a concern because it contains acrylamide, a compound that forms naturally when roasted at high temperatures. Although the content can be twice as high as roasted coffee, the actual amount is only about 0.5–1 microgram/cup, which is still within the safe limit according to WHO. To reach the harmful levels shown in animal experiments, humans would have to consume hundreds of thousands of times the amount of acrylamide in their normal diet. Many large studies have also found no clear link between coffee (including instant) and cancer risk. 

Nutritionally, instant coffee still provides antioxidants such as chlorogenic acid and polyphenols, which help protect cells, support metabolism, the liver, control weight and reduce the risk of type 2 diabetes.

A study of 400,000 people (European Journal of Preventive Cardiology, 2022) showed that drinking 2–3 cups of coffee a day, whether instant or roasted, reduces the risk of death by 27% compared to people who do not drink coffee. 

How to choose and use instant coffee effectively 

When choosing to buy, users should pay attention to the ingredients listed on the packaging. 

Proper storage also plays an important role. Instant coffee should be placed in a sealed bag, in a dry, cool place, away from sunlight and high humidity. After opening, the product should be used within 3–6 months to ensure the original flavor.
