When enjoying a cup of coffee, few people know that its distinctive flavor is formed long before the coffee beans are grown on the tree. The altitude and temperature where the coffee plant grows play a crucial role in determining the quality, flavor, and characteristics of each coffee bean. 

Understanding the relationship between altitude, temperature, and coffee quality not only helps growers cultivate more efficiently but also helps consumers better understand the product they are enjoying. Let's explore this interesting knowledge. 

THE RELATIONSHIP BETWEEN ALTITUDE AND TEMPERATURE 

In nature, altitude and temperature have an inverse relationship. According to the laws of physics, for every 100 meters increase in altitude above sea level, the average temperature decreases by about 0.6°C. 

This means that coffee grown at an altitude of 1,500m will experience a cooler environment, approximately 9°C cooler, than coffee grown at 0m (at the same latitude). This temperature difference creates completely different growing conditions, directly affecting how the plant develops and the quality of the beans. 

It should be noted that, in addition to altitude, geographical latitude also affects temperature. Regions near the equator often require higher altitudes to achieve the ideal temperature for coffee plants.

INFLUENCE OF TEMPERATURE ON GROWTH PROCESS 

Growth Rate 

In high-altitude regions with lower temperatures, the growth and ripening of coffee cherries are slower. While coffee in low-altitude regions may ripen in 6-7 months, coffee in high-altitude regions often needs 9-10 months, or even up to 11 months. 

The extended growing season allows coffee beans more time to accumulate nutrients, sugars, and organic acids. This is what creates the complex and rich flavor of coffee beans.

Bean Density

Low temperatures force coffee plants to work harder to grow. Under these conditions, the plant focuses its energy on producing high-quality fruit rather than rapidly increasing in size. As a result, the coffee beans have a higher density, are harder, and contain more nutrients. 

Coffee beans grown at low temperatures have a tighter cellular structure, which helps retain flavor better during roasting and brewing. 

IMPACT ON FLAVOR AND QUALITY

Coffee grown in high-altitude regions with cool temperatures often has a higher natural sugar content. This is an important factor in creating natural sweetness and balanced flavor when brewed. High sugar content also contributes to the creation of complex aroma notes during roasting. 

Cool temperatures help coffee plants maintain and develop beneficial organic acids such as citric, malic, and tartaric acids. These acids create the bright, fresh acidity characteristic of high-quality coffee, while also contributing to its flavor complexity. 

Coffee beans from highlands contain more natural oils, resulting in a dense body and long-lasting aroma. These oils also contain more aromatic compounds, creating unique flavor characteristics. 

BENEFITS OF THE HIGHLAND ENVIRONMENT 

Reduced Pests 

Diseases Low temperatures in highlands are a natural barrier to many coffee pests and diseases. The coffee berry borer, one of the most common pests, cannot reproduce effectively at temperatures below 15°C. Coffee leaf rust also develops less well in cooler environments. This reduces the need for pesticides, resulting in cleaner and more environmentally friendly products. 

Air Quality 

Highlands generally have cleaner, less polluted air, with appropriate levels of oxygen and humidity. This environment is not only good for the plant's growth but also helps preserve the natural flavor of the coffee beans.

ADDITIONAL FACTORS 

Rainfall 

Besides altitude and temperature, rainfall also plays a crucial role. Ideal coffee-growing regions require 1,500-2,000 mm of rainfall per year, evenly distributed throughout the growing season. Altitude affects air humidity and rainfall in the area. 

Sunlight 

In high-altitude regions, sunlight intensity differs from that in low-altitude regions. Coffee plants need just the right amount of light – not too harsh, but enough for efficient photosynthesis. This is why many high-end coffee-growing regions often combine coffee cultivation with shade trees. 

Soil 

Soil in high-altitude regions typically has good drainage and is rich in minerals from ancient volcanic activity. Combined with cool temperatures, this is ideal for coffee plant growth.
