Many people wonder: Is this sour taste a sign of poor quality coffee? The answer is no. Sour taste is a natural characteristic of pure coffee that only high-quality cups of coffee possess.

The Nature of Sourness in Coffee 

The sourness in coffee comes from the natural acid compounds in the bean. The main acids in roasted coffee include citric, malic, tartaric, acetic, lactic, and phosphoric acids. These acids are also found in fruits, giving coffee its complexity and variety. 

It is important to distinguish natural sourness from spoiled sourness. Natural sourness is characterized by a light, bright taste, like citrus or green apple, giving a refreshing, pleasant feeling. Meanwhile, spoiled sourness is often harsh, unpleasant, acrid, and lacking a sweet aftertaste. 

Why Is Pure Coffee Sour? 

Origin of Coffee Varieties 

Each coffee variety has its own distinct flavor. Arabica coffee from East Africa, especially Kenya and Ethiopia, has higher levels of citric acid, giving it a bright, tropical sourness. Meanwhile, Robusta has a stronger bitter taste and is less sour. 

Malic acid has a flavor often associated with green apples, and is found in abundance in unripe fruit. This is why coffee cherries that are not fully ripe often have an unpleasantly sour taste.

Roast Levels 

Light roasts have a distinct acidity and a delicate flavor. Medium roasts have a medium brown color, still dry on the surface, but the aroma begins to be more pronounced. Dark roasts have a dark brown color, with a slight oiliness on the surface. At this level, the acidity is almost gone, replaced by a light, deep, sweet aftertaste. 

Light roasts reach temperatures between 180°C and 250°C, ending just before or during the first crack. The shorter roast retains the most natural acids, creating a characteristic bright acidity.

Distinguishing the Sour Taste of Quality Coffee and the Sour Taste of Poor

- Characteristics: Fresh, bright, like citrus, green apple or cherry 

- Aftertaste: Sweet and lingering 

- Feeling: Fresh, pleasant, stimulating the taste buds positively 

Tartaric acid creates a feeling of leaving a bitter aftertaste. This is one of the main ingredients in sour candy, explaining why some coffees have a particularly attractive bright sour taste. 

Poor quality sour taste is often caused by: 

- ​​Moldy or damp coffee 

- Improper storage 

- Improper brewing technique (temperature too high, extraction time too long) 

- Poor quality coffee beans or impurities 

Signs of recognition: Harsh, unpleasant, pungent taste, no sweet aftertaste, strange smell or unpleasant vinegar sour smell. 

Simple Test At Home 

- Observe the color: Pure coffee has a clear brown color, not pitch black 

- Evaluate the aroma: Natural, gentle aroma, not harsh 

- Analyze the taste layer: Slight sourness at the tip of the tongue, followed by balanced bitterness and sweet aftertaste 

- Check the foam and residue: Thin foam dissolves quickly, fine residue is not sticky.
