The Secret to Choosing the Right Water

Many people assume that boiling water is enough, but in reality, water temperature is one of the most critical factors affecting coffee flavor.

Ideal Water Temperature: 90–95°C (194–203°F)

This is the optimal range for extracting maximum flavor without burning the coffee grounds. Water that is too hot (above 96°C) can cause a harsh, burnt bitterness. Water that is too cool (below 85°C) cannot extract enough flavor, resulting in weak coffee.

How to Achieve the Right Temperature:

- Boil water (100°C), then turn off the heat and let it cool for 30 - 60 seconds

- Use an electric kettle with temperature control

- Use a thermometer if you want precise accuracy

Tip: If you prefer lighter coffee, brew with about 100 ml of water first, then add more hot water after the coffee has finished dripping. This preserves aroma better than brewing with too much water from the start.

Water Quality Matters

Tap water containing chlorine can negatively affect coffee flavor. If possible, use filtered or bottled water for the best taste. Very hard water (high mineral content) is also not ideal, as it may create a metallic aftertaste.

Proper Water Pouring Technique

How you pour water into the filter directly affects coffee extraction.

Step 1: Blooming (Pre-wetting)

Before pouring the full amount of water, slowly pour about 20–30 ml over the coffee grounds and let it sit for 30 seconds. This allows the coffee to “bloom,” releasing CO₂ and preparing it for optimal extraction.

Step 2: Circular Pouring

After blooming, slowly pour the remaining water in a circular motion from the outside toward the center. This ensures even saturation of all coffee grounds. Avoid pouring directly into one spot, as this can create channels where water flows through without proper extraction.

Step 3: Be Patient

Pour at a steady, moderate pace, not too fast (which can cause overflow), and not too slow (which may cool the coffee grounds). The ideal pouring time is about 20 - 30 seconds for the full volume of water.

Optimal Brewing Time

After pouring the water, how long should you wait? The answer is 3–5 minutes, depending on your taste preference:

- 3 minutes: Lighter flavor, less bitterness ideal for beginners or those who prefer a mild cup

- 4 minutes: Perfect balance of richness and smoothness

- 5 minutes: Strong, bold coffee with higher caffeine ideal for those who need maximum alertness

Important: Once the coffee has fully dripped into the cup, remove and discard the filter immediately. Leaving the filter immersed for too long can cause excessive bitterness.
